Palate is biscuity, waxy and some orchard, green pineapple, salty, orange blossom

Wow! This nose. Shoe polish, maybe?? Carob, pineapple lumps, camphor

Palate really funky, minerality, lots of spice and juicy fruit. Tastes like “old whisky” and elegant.

Finish leather, tobacco, orchards.

Palate butter cake, loads of fruit, leads to dates, golden syrup

45 – Aultmore 11yr exceptional cask series

Nose is sugared almonds, cloves, gulab jamun and dried mango

Palate is light and airy with sugar sweetness, apple skin, rose petals, red berries and some milk chocolate

Finish is relatively complex and shows flintiness, candy, cream and bruised apples

46 – Balblair 2000 18yr Sherry Cask 46%

Nose of sultanas, caramel fudge, golden syrup, cloves in orange. Dried dark fruit, especially prunes and dates.

Palate pecan pie, vanilla bean cream and tobacco. Slight sulphur note.

Finish is warming think brandy cream sauce drenched Xmas pud and a handful of hay.

47 – Inchgower 9yr by Cadenhead 56.5% (3y ex-bourbon 6y sherry)

Nose of warm date scones, honey, milk chocolate

Palate is of medium weight and starts with light maraschino cherry then honey, banana cake, salt, woody and a good lick of date syrup

Finish tea tannins, brown bread, touch of sulphur but a really lovely cranberry jelly note singing.

48 – Cardrona Oloroso Dramfest 2020 cask #735

Nose is really woody to begin, like fresh cut pine and balsa wood. Vanilla essence and dates.

Palate is hot and unbalanced. Eventually some cream, egg whites and cocoa notes. Maybe some dried fruit like fat sultanas.

Finish that pine note returns.

Nose of honey comb, home churned butter, band-aids, river stones and tar.

Palate is autumn leaves, honey, salt, coal and plastic.

Finish more river stones and tar

102 – Blackadder Raw Cask Aultmore 2006 11yo, 57.6% Cask #307142

Nose starts tropical with strong dried pineapple and mango skin, sweet honey, raw pastry, salted lemons

Palate of milky sweet tea. It’s malty with tropical and stone fruit. A hint of flinty minerality.

Finish is a simple salty butter.

103 – Firkin Whisky Co Firkin 49 Tullibardine 2011 8yo Oloroso Amontillado Casks, 48.9%

The nose was nutty, clear stone fruit, lemon sip, milk chocolate.

Palate had a lovely iced coffee note. Followed by heather, flinty, Brazil nuts and a touch a salty citrus.

Finish of cold salted butter, kopiko (coffee) lollies.

Nose: Rose heads, peach ice tea, my mum’s Madeira cake (yes I’m serious)

Palate: great mouthfeel, light tropical, nutty,

Finish: long finish, liquorice, flourless orange cake

105 – Blackadder Raw Cask The Old Man Of Hoy 2005 12yo 2018 Batch 1 Single Orcadian Malt, 60.7%

Nose was rubbery and chocolate which makes me think HP. Has very good seaweed and maritime elements.

On the palate it is heavy, honey and charcoal dominant. Pleasant sweet rubbery notes.

The finish becomes flinty and minerally and heavy with wet stones.

106 – Firkin Whisky Co Firkin Islay Caol Ila 2012 7yo Marsala Cask, 48.9%

Nose super maritime, gluey, dark chocolate, sweet lemons, corn chips

Palate has a gorgeous mouth feel, really flinty, stones and campfire

Finish – salty kelpy rocks.

Whisky 2017 – 114-117

Once again the Whisky Gods were smiling on me. Yao from The Elysian opened a bottle of Munro’s King of Kings that his parents pulled from their cellar and gave to him. Such an interesting dram – old whisky seems to be a lot more herbaceous to my palate. Not a lot of info out there about this one, except to say James Munro also ran Dalwhinnie in the early 1900s. 

114 – Arran Bourbon Cask 1999 54.8% 2015 Release Cask 78
Pineapple, rock melon skins, apricots, chocolate mousse, passiona. Cream, passionfruit skins, apricot, tea tannins, green apricots, butter, almonds, red skins, raspberries.

115 – Maltman Aultmore 7 Years Port Cask 2008 Cask 100
Honey, crumpets, dark chocolate, musk sticks, pine glue, hot brown butter, menthol, strawberry jam on white bread with butter. Peach ice tea, butter, banana, coffee cream, slight cheese cake, rock melon with vanilla cream.

116 – Munro’s King of Kings Rare Old De Luxe
Wax, soy sauce, ginger, ginseng, heather, leather. Initially really light but wax, caramel, herbaceous, tobacco, old dusty chocolate. Didn’t have much time with this dram as it was a small dram as a gift once the bottle was opened. Old and unique.

117 – Glenfarclas Family Cask for Shinanoya 10 years Cask 5695
Old tropical fruit, musk, grilled pineapple, roasted peaches, milk chocolate, old wood. Cocoa, dusty, orange rind, soy sauce, fruit tingles, bubble gum and vanilla pods.

56 – Aberfeldy 12
A little rubber, sea salt, touch of vanilla fudge, slight oil, cucumber skin, pepper, dried orange zest. Slight salty, flinty and mineral, honey.

57 – Aultmore 12
Rubber, salt, cultured butter, chamomile, slight dusty note. Salt, grains, bracken, chamomile.

58 – Aberfeldy 21
Oranges zest, marmalade, pepper. Old leather and salt, dry and dusty. Delicious. (This was not part of the tasting)

59 – Craigellachie 13
Butter, stewed apples, custard, slight rubber. So buttery initially on the pallet, rubber and sulphur and some sugar.


After the tasting I introduced a couple of mates to the Signatory. The savvy Yao suggested the Old Malt Cask… but unfortunately with all the other drams I don’t think this one came through.

60 – Old Malt Cask Craigellachie 18
Suffers next to a half dram of the signatory. Buttery but I can’t pick up much else. I got some crazy like watermelon flavor in there.
